- 1 1/2 oz Lekithos Organic Almond Protein
- 1 egg or vegan equivalent
- 1/2 tsp Baking Powder (Low Sodium)
- 1/4 cup Almond Milk
- 1 tsp Vanilla Extract
- 1 fruit Kiwi Fruit
- 1/4 serving (serving = 1/3 cup) Sliced Almonds (Topping)
Mix all cake ingredients (except kiwi)… Grease microwave save mug and line sides with sliced kiwi. Pour batter over it and microwave 3 minutes. Take out, let cool, and add sliced almonds and extra kiwi to top!
